Our first selection from Liliana Burbano continues our exploration of Pink Bourbon from San Agustín. In the cup we find clementine, star fruit, and blueberry compote.

Hand-picked at peak ripeness. Held in-cherry for 50 hours. Floated. De-pulped. Dry-fermented for 30 hours. Washed. Dried on raised beds for 20 days until moisture content reaches ~10%.
ABOUT LILIANA BURBANO
Over the years, we have worked with many selections from the Burbano family, but this is our first year featuring a lot from Liliana. With deep experience in the San Agustín region, it is always exciting to discover new coffees from new farms. One of our core priorities is identifying exceptional producers and helping connect them to the higher-paying specialty market—and Liliana’s coffee is a perfect example of that mission in action.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
