Notes from SEY:
This is our first year purchasing coffee from Nayith Morales, who has a very small Pink Bourbon garden, less than a hectare (~2.5 acres), in one of our favorite regions in Huila. In the cup we find strawberry preserves, lemonade, and sugar cane.

Hand-picked at peak ripeness. Floated to further remove defects and de-pulped on the day of harvest. Held in-cherry for 40 hours. De-pulped. Dry-fermented in tile for 24 hours. Dried on raised beds until moisture content reaches ~10.5%.

This is our first year purchasing coffee from Nayith, whom we were introduced to through our project in southern Huila. Despite having an extremely small garden of Pink Bourbon—less than a hectare (~2.5 acres) in size—the quality was exceptional. We look forward to visiting this farm on our next trip to Huila.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.

The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
