Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. De-pulped. Dry-fermented for 35 hours. Dried on raised beds for 30 days.
ABOUT JAIR ARLES GALINDEZ
This is only our second year working with Jair Arles Galindez, but his coffee made an immediate impression. Pink Bourbons from southern Huila continue to stand out as some of the most expressive profiles in coffee, and Jair’s lot is no exception. As we deepen our work in this region, we are discovering more nuanced variations in profile, shaped by the diverse terroirs that make Huila so special. Thanks to producers like Jair, the future of this project looks exceptionally bright.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
