This is our first year purchasing a lot from Oliva. It is a lovely expression of Pink Bourbon grown in San Agustín, and we look forward to visiting Villa Sofia next season. In the cup we find dark berries, molasses, and a long, complex finish.

Hand-picked at peak ripeness. Floated to further remove defects. Held in-cherry for 24 hours. Dry-fermented in tile tanks for 36 hours. Dried until moisture content reaches 10.5%.
ABOUT OLIVA QUINAYAS
Oliva Quinayas is a new producer to us, and we are grateful that Jose from Osito set this coffee aside. While we still know little about her, we look forward to visiting her farm and getting to know her during our next trip to Huila later this year.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
