This is our first year buying coffee from Salvador. It is always exciting to discover new and young producers, especially when they are growing Pink Bourbon at over 1,800 masl! In the cup we find pomegranate, raspberry, and lemon.

PROCESSING
Hand-picked at peak ripeness. Floated to further remove defects. De-pulped same day of harvest and dry fermented for 36 hours. Dried in parabolic dryers for 18-25 days.
ABOUT SALVADOR VARGAS
This is our first year purchasing coffee from Salvador Vargas and his family. Although they have spent their entire lives working in coffee, it was about four years ago that they began transitioning to specialty production. After learning about the potential for higher prices with specialty coffee, Salvador’s wife led the decision to plant Pink Bourbon and Gesha at the farm’s highest elevations. We are excited to bring their coffee to market and look forward to seeing how this young farm continues to grow and evolve.
ABOUT PINK BOURBON
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.

The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
